Betalad

Enzymatic preparation containing a complex of enzymes for mashing, in particular β-glucanase for the destruction of non-starch polysaccharides of raw materials. The product is obtained by cultivation of the strain Pen. canescens. The primary activity of the preparation «Betalad» is endo-1,4-β-glucanase, which catalyzes the hydrolysis of 1,4-bonds in cellulose and β-glucans.

«Betalad» is used in breweries at mashing it can be also added to the beer for hydrolysis of residual β-glucans in order to eliminate possible problems with filtering or during storage of beer.

It effectively destroys β-glucans and other non-starch polysaccharides.

Advantages of the preparation:

  • decreases the viscosity of mashes;
  • ncreases the speed and volume of wort and beer filtration;
  • prevents the occurrence of specific turbidity in beer related to the presence of β-glucans.
